My Week In An “Egg”shell
Get ready for lots of food talk because that’s basically all I have to share that I feel is somewhat interesting. I told you guys…some weeks are going to be more exciting than others, and last week I was the biggest hermit. I didn’t go into the office, and some days I didn’t even leave my house…
Let’s get to the reasoning behind this, shall we?
Mavis’ Fractured Leg
Our plans for the Super Bowl that I mentioned last week didn’t turn out quite as I had hoped. While at our friends house, Mavis was playing with another dog and suddenly started limping. It gradually got worse, to the point that she couldn’t put any pressure on her one front leg to walk. She wouldn’t even lie down. Her screams were bloodcurdling and heartbreaking to listen to.
We decided to leave the party and take her to the emergency vet. It was there that we learned she had a fractured leg. My poor baby!! They wrapped her up in the cutest pink cast with a heart on it. It only last a few days but it was enough support to help her walk.
I stayed home with her all week to make sure she stayed calm, rested and didn’t tear her cast to pieces. It sure was a good week to stay home though with all the freezing rain we had.
Spoiled Myself With Junk Food
I’m not a huge snacker. We rarely ever have cookies, chocolate or chips in the house. But being cooped up seemed to give me some serious cravings. Cravings that I have no shame caving to. I ventured to the grocery store and bought ice cream, chocolate and Honey BBQ Poppables. Have you tried these?! They’re my new addiction!
I also felt inspired by an Instagram post I had seen earlier that day to make Rice Kripsie Squares with plain rippled chips on top. There’s something about a salty and sweet combo that I LOOOOOVE! I made my own version, with a layer of melted semi-sweet chocolate on top and ruffles chips.
Now, I regret cheaping out and buying no-name chips. I think these would have been wayyyyyy better with RUFFLES Original. I also think next time I’ll add even more chips. But overall, the flavour combination turned out really great! And they were a hit with the neighbours too!
Experimenting With Our Air Fryer
My Dad bought us an air fryer a little over a week ago, and I’ve had a blast experimenting with different meals. Jerk flavoured chicken drumsticks are amazing! They seem to cook perfectly. Juicy – not chewy. I’ve done sausages, which were incredibly easy and way less messy! The grease is contained inside the air fryer, which was my favourite part. No splatter cleanup necessary.
But my favourite so far has been coconut shrimp. I battered my own (let me know if you would be interested in seeing the recipe I used) and they took no time at all in the air fryer.
